gregory austin

Gregory Austin:After training at the Culinary College in his native Barbados, Gregory has had an extensive career in many parts of the world, in London at the Govroche, Midsummer House in Cambridge and at Restaurant Radius in Boston, the Blantyre in Lenox, Massachusetts and at the world renown Peter Island Resort in the British Virgin Islands. He is presently Executive Chef at the Ocean Terrace Inn at St. Kitts

gary casson

Gary Casson: After leaving college in England, Gary worked in several top rated restaurants in Italy, England and Bermuda. He then worked as Head Chef at the award winning Casa del Maco Restaurant in Spain. Gary moved to the Caribbean in 1993 and opened his own restaurant in Jamaica in 1999 until 2006 when he relocated to St. Kitts. He is currently the Executive Chef at Jasmine's Restaurant.

Alexander James: Kittitian by birth, Alex trained extensively in England and France including Roger Verge’s 3-Star Michelin Restaurant in Cannes. From 1991 he has held top level posts at prestigious Caribbean restaurants and resorts, including Head Chef at The Jamaican Pegasus, Executive Chef at the Res Resort and the St. James Club in Antigua and The Royal St. Lucian in St. Lucia. Alex opened Serendipity in November 2004.

Verral Marshall: Native to Jamaica, Verral is owner and executive chef of the acclaimed Marshalls Restaurant. Ten years ago, he transformed the pool area of Horizons Villa Resort into a stylish restaurant with smashing ocean views and a lush terrace of fruit trees, vegetables and herbs. Verral infuses his cuisine with ultra fresh local ingredients combined with global culinary influences to create a uniquely elegant Caribbean fare.

Pam Yahn After graduating from the Culinary Institute of America in the first class to admit women, Chef Pamela Yahn served as the Executive Chef on the Riverboat Steamer Mississippi Queen and was later Executive Chef on two major Caribbean cruise lines. She exposed herself to the many tastes of the Caribbean and after coming to Ottley’s in 1990, she has infused her menus with contemporary style and ever fresh uses of Caribbean ingredients.
